  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes
  • 1 cup vegetable or chicken broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup heavy cream or coconut cream (for dairy-free)
  • Fresh basil leaves (optional, for garnish)

Instructions

Heat the olive oil in a large pot over medium heat. Add chopped onion and cook until translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant. Stir in crushed tomatoes, broth, and sugar if using. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes to let flavors meld.

Use an immersion blender directly in the pot to puree until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth, then return to the pot. Stir in the heavy cream, and season with salt, pepper, and red pepper flakes if desired. Heat through but do not boil once the cream is added.

Ladle into bowls, garnish with fresh basil if desired, and enjoy!
